Crunchy Fish

CRUNCHY FISH

I promise I haven't dropped off the face of the earth.  it just feels like it!  I've had a lot going on with my sweet boy, and his feeding tube.  But I'm trying to get back on the bandwagon! 

This is one of those quick go-to recipes, in an effort to get my family to eat more FISH.  Because it's good for you!  That's what I tell Captain Jax, who tries to counter that Oreos are good for him too.  I disagree with that. 

This recipe is also a pantry recipe, just a few ingredients, and it comes together nice and fast!  Perfect for those busy nights; just add a side of veggies and you're set!

  • fish fillets (I use tilapia mainly, and plan for about 1 fillet per person)
  • panko bread crumbs
  • dried parsley
  • eggs, mixed up for an egg wash
  • flour
Dry the filets with a paper towel.  Coat in flour, then egg wash, and then the panko mixed with parsley (or other yummy seasonings--lemon pepper, italian. . .).  Pan fry the fish on each side until it's browned.  Fish cooks quickly, remember!  Serve with a nice side of veggies.

  1. Looks good! This is a great "go-to" recipe for many things, chicken, pork, ravioli, tofu, etc...

  2. Yum, that sounds so good! Captain Jax sounds a lot like my dear husband - not a huge fan of fish, no matter how hard I try! ;)
