Grilling Pineapple

GRILLED PINEAPPLE
AKA SWEET SUGARY GOODNESS


You actually need to cut the pineapple to grill it, believe it or not {{grins}} Have you ever cut up a pineapple? It's really easy to do. Just take your knife (I prefer a serrated blade, so I can 'saw' through the pineapple) and lop off the top and bottom.

I'm always amazed at how big the top of the pineapple is. It's pretty much the same size as the pineapple itself! Anyway, then you want to start cutting off the edges. If you do it in strips, it works great.

See? Just like that, just keep cutting around the pineapple, until you got all the spiky edges off. It's ok, if you miss some the first time around, you can trim them off later.


Then you just start slicing edges off, right close to the core, if you're going to just chunk it up and eat it raw. Is that considered raw? I suppose it would be if you don't cook it. . .anyway, if you slice skinnier slices, about 1/2 inch to 1/4 inch, then it's better to grill with.


then you've got the lovely core here, all in one piece! Feel free to suck the juices out of it. Your hands are already sticky so you might as well!


oh yeah, keep a garbage bag nearby, because you end up with a lot of pieces you're going to throw away, and this makes clean-up a WHOLE lot easier!


Then you have a nice plateful of sliced pineapple, ready to throw on the barbecue! that one pineapple actually made quite a lot of fruit.

This is what it looks like if you cook it on the top rack. You pretty much just end up with warm pineapple. It's good, but the sugars don't get caramelized, which is what makes it so darn good!


so go throw it on the bottom, where it's a lot hotter, and the sugars can get all tasty!

Yes. . .doesn't that look wonderful? admit it, you know what you're going to have at your next summer barbecue! And watch out for that man of yours, he may try to eat the whole thing! At least mine sure did. I think I got 1-2 pieces. Little piggy. . .

Watermelon Lasagna

WATERMELON LASAGNA
a wonderful summertime desert

It's so hot outside, I don't want to turn my oven on to try to make holiday deserts. I want sometime cool and refreshing. So we're making watermelon lasagna. Don't worry, there's no noodles in it! {{grins}} I think you'll like it. We've got watermelon, strawberries, vanilla yogurt, and cornflakes. Now let's get cooking--er, assembling.

Chop your watermelon in half, and use a melon baller to take all the meat out of one half. Use the small side, and don't worry if it's not a full ball, no one will notice! Dice your strawberries up pretty small too. Feel free to add some sugar and eat them , I sure did!

When all your pieces are in the bowl, add your yogurt, and give it a good stir. Mix it all together good. It may be a little soupy, from the fruit juices, but it's not going to hurt anything.


See? A little juice never hurt anything


Cover the bottom of your pan with some cornflakes. It doesn't have to be precise, just as long as there's a good layer.


Then start layering your fruit mixture over it, and then another layer of cornflakes. You want to do about three layers of it.


See how nice it looks? And it tastes good too!

And there you have it. Watermelon Lasagna. No noodles, and it's nice a cool for those hot summer days.

Watermelon Lasagna

4 cups corflakes
2 cups minced watermelon
2 cups fresh blueberries or diced strawberries
2 cups vanilla yogurt

Place 1/3 of the corn flakes in an even layer on the bottom of an 8x8 serving dish. Mix together the watermelon, blueberries and yogurt and spoon half of it over the corn flake layer evenly. Sprinkle another layer of the corn flakes over the yogurt mixture and then layer the rest of the yogurt mixture of that. sprinkle the remaining corn flakes evenly over the top. Serves about 6, and works great for breakfast too! Feel free to try it with granola! that's my next attempt.
