Watermelon Lasagna

WATERMELON LASAGNA
a wonderful summertime desert

It's so hot outside, I don't want to turn my oven on to try to make holiday deserts. I want sometime cool and refreshing. So we're making watermelon lasagna. Don't worry, there's no noodles in it! {{grins}} I think you'll like it. We've got watermelon, strawberries, vanilla yogurt, and cornflakes. Now let's get cooking--er, assembling.

Chop your watermelon in half, and use a melon baller to take all the meat out of one half. Use the small side, and don't worry if it's not a full ball, no one will notice! Dice your strawberries up pretty small too. Feel free to add some sugar and eat them , I sure did!

When all your pieces are in the bowl, add your yogurt, and give it a good stir. Mix it all together good. It may be a little soupy, from the fruit juices, but it's not going to hurt anything.


See? A little juice never hurt anything


Cover the bottom of your pan with some cornflakes. It doesn't have to be precise, just as long as there's a good layer.


Then start layering your fruit mixture over it, and then another layer of cornflakes. You want to do about three layers of it.


See how nice it looks? And it tastes good too!

And there you have it. Watermelon Lasagna. No noodles, and it's nice a cool for those hot summer days.

Watermelon Lasagna

4 cups corflakes
2 cups minced watermelon
2 cups fresh blueberries or diced strawberries
2 cups vanilla yogurt

Place 1/3 of the corn flakes in an even layer on the bottom of an 8x8 serving dish. Mix together the watermelon, blueberries and yogurt and spoon half of it over the corn flake layer evenly. Sprinkle another layer of the corn flakes over the yogurt mixture and then layer the rest of the yogurt mixture of that. sprinkle the remaining corn flakes evenly over the top. Serves about 6, and works great for breakfast too! Feel free to try it with granola! that's my next attempt.
