Pizza Puffs

When I saw this during a blog hopping evening, (don't you all spend your evening blog-hopping?) I knew they were something our family would love.  The original recipe used mini pepperonis, but I used what I had on hand.  It came together so quickly! I used my cookie scoop to make sure there was equal amounts in each muffin compartment, and it made making these even easier.

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 2 Tablespoons chopped olives
  • about 1 cup mozzarella cheese, shredded
  • about 1 cup pepperoni, diced
  • pizza sauce, for dipping

Preheat oven to 375 degrees. Grease a 24-cup mini muffin pan. Lightly sprinkle with cornmeal, if desired. In a large bowl, whisk together the flour and baking powder; stir in the milk and egg. Stir in the cheese, olives, and pepperoni; let stand for 10minutes. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, about 25 minutes.  Serve the puffs with the pizza sauce for dipping.

Grilled Veggie Sandwiches



I know it's the middle of winter, and most of us do NOT want to spend time outside with your grill. I don't blame you! But when it gets a little warmer, go out there and give these a try!


It's pretty basic.

  • Veggies of your choice (squash, zucchini, peppers, mushrooms)
  • Olive Oil
  • Balsamic vinegar

Slice your veggies thin and long (a mandolin works great!) and marinate with a combo of olive oil and balsamic vinegar. Let it sit for a while, stirring occasionally (a large baggie would work awesome!)

While you're grilling your veggies, you want to get your bread ready.
  • mayonnaise
  • italian seasoning
  • garlic powder
  • monterey jack cheese
  • sub rolls
Mix together the mayonnaise, italian seasoning and garlic powder until it's a nice flavorful consistency. Smear it all both sides of your bread. Place monterey jack cheese slices on the one side and throw them in the oven for a little bit. You might want to try the broil aspect to get them to cook faster.
When the cheese is all melted, and the pile of veggies is all ready you can go ahead and assemble your sandwiches.

Mmmm. . . .

An awesome refreshing meal! (and you get your days worth of veggies in!)

  • monterey jack cheese

Slice up your veggies thin and long. Marinate them in a mixture of balsamic vinegar and olive oil for a while, then grill. While they're grilling, prepare your rolls. Mix together some mayonnaise, garlic powder, and italian seasoning until it tastes good to you. Smear it on both sides of the roll, then place a slice of cheese on one side. Broil the rolls for a few minutes in the oven until the cheese is melty. Add your veggies and enjoy!

Monte Cristo Sandwiches--Monday Mix Up

MONTE CRISTO SANDWICHES


So I'm a little slow this week, as usual, I know. But remember that pancake mix we made up a few weeks ago? Here's another meal that uses it, that's more fun than pancakes!


Here's what you'll need:


mix together your egg and milk. We used soy milk to help make this dairy free. And when you make your pancake mix, if you substitute soy milk powder (which can be found online) and make your sandwiches with just ham, you've got a dairy free meal for that little child who can't eat dairy! (and it's still good, I promise)

Then add your pancake mix and mix it up good.


Put your mayonnaise on each side of the bread, then layer your ham on one side


and your cheese on the other! use whatever kind you like best (or happen to have on hand)


Slice the sandwiches in half. I've always preferred triangle halves over rectangle, but whatever suits your fancy is fine with me.

Dip each side into the batter and place in your pan with a little bit of oil.


Cook until brown and then flip and cook on the other side.

Cook them all and serve them up. Easy as that!

  • 6 slices bread
  • mayonnaise
  • cheese
  • deli meat
  • 1 egg, beaten
  • 1/2 cup milk (use soy to make it dairy free)
  • 1/2 cup pancake mix
  • oil for pan
heat oil in pan. Combine egg and milk with pancake mix. Spread mayonnaise on each side of the bread, them place your meat and cheese on each side. Cut sandwiches in half and dip each side into the batter. cook in pan until browned on each side and cheese is melted.
Variation (which I haven't tried, but sound good): bacon/sausage patty, and a fried/scrambled egg--could make for a good breakfast! I bet they could even be frozen and reheated as needed.

Egg Salad Sandwiches

EGG SALAD SANDWICHES

Well, after making my deviled eggs the other day, the plate was full and I had left over hard boiled eggs! So I made up a batch of egg salad for sandwiches. I just discovered this meal about a year ago. Before then, my palate wasn't as um, refined as it is now. Meaning, I wouldn't dare eat something new. Because it's still not very 'refined'.


So after you make the amount of deviled eggs that you want, take a few extra hard boiled eggs and cut them up.


I got this handy-dandy egg slicer at Ikea for like 2 bucks! Love me a good deal! :)


go ahead and use the same bowl you mixed the egg yolks from the deviled eggs in. Because this egg salad is pretty much mashed up deviled eggs.


so yes, add your ranch, mustard, cheese, and salt and pepper. I love the dijon in this, since I'm the only one who will eat it anyway. Captain Jax won't touch dijon.

Mix it all together nicely. Yum, yum, yum. Taste it to make sure you like it! :)


Smear it on some toasted bread, and put guacamole on the other side.

  • hard boiled eggs
  • mustard
  • ranch
  • shredded cheese
  • guacamole
  • toasted bread

Mash eggs and mix the mustard, ranch and cheese into them. Smear on one side of toasted bread, and smear guacamole on the other side. Eat and enjoy.
