Monte Cristo Sandwiches--Monday Mix Up

MONTE CRISTO SANDWICHES


So I'm a little slow this week, as usual, I know. But remember that pancake mix we made up a few weeks ago? Here's another meal that uses it, that's more fun than pancakes!


Here's what you'll need:


mix together your egg and milk. We used soy milk to help make this dairy free. And when you make your pancake mix, if you substitute soy milk powder (which can be found online) and make your sandwiches with just ham, you've got a dairy free meal for that little child who can't eat dairy! (and it's still good, I promise)

Then add your pancake mix and mix it up good.


Put your mayonnaise on each side of the bread, then layer your ham on one side


and your cheese on the other! use whatever kind you like best (or happen to have on hand)


Slice the sandwiches in half. I've always preferred triangle halves over rectangle, but whatever suits your fancy is fine with me.

Dip each side into the batter and place in your pan with a little bit of oil.


Cook until brown and then flip and cook on the other side.

Cook them all and serve them up. Easy as that!

  • 6 slices bread
  • mayonnaise
  • cheese
  • deli meat
  • 1 egg, beaten
  • 1/2 cup milk (use soy to make it dairy free)
  • 1/2 cup pancake mix
  • oil for pan
heat oil in pan. Combine egg and milk with pancake mix. Spread mayonnaise on each side of the bread, them place your meat and cheese on each side. Cut sandwiches in half and dip each side into the batter. cook in pan until browned on each side and cheese is melted.
Variation (which I haven't tried, but sound good): bacon/sausage patty, and a fried/scrambled egg--could make for a good breakfast! I bet they could even be frozen and reheated as needed.

  1. Krystal- I have so been craving a sandwich like this. So interesting to me that it uses pancake mix!! Love the idea! It looks so good. Ill have to try it your way!
