Banana Muffins-Monday Mix up

BANANA MUFFINS (or bread)

Happy monday friends! I'm sorry it's been so long since you've heard from me, we went through a small sickness at our house, where K-girl and I were out, and then we spent a weekend in the southern part of the state visiting my sister and her boyfriend, and watching him do some bike races. In between all those things, I'm still working on packing, and we're still trying to make our way across the country. Soon, I hope. . .soon.

These muffins were wonderful. I would have liked them a little more moist, I think another banana, or some milk in them would have made them a little softer. But they were easy as they are.

Combine everything into your bowl. (beat the eggs before you put them in, it makes things easier)

See how it's rather thick? I really think one more banana, or a splash or two of milk would be ok.

Grease your muffin pan up nice, and spoon your batter into the pan.

And this is the best part. Mix together brown sugar, butter, flour, and cinnamon. Preferably in a bright pink bowl please.

Spoon that mixture over the top of all the muffins. Ooh, it's going to be great, just you wait!

Look at how wonderful that top turned out, and it gives the muffins a sweeter taste as well.

Banana Muffins (or bread)
  • 3 1/2 cups sweet bread mix
  • 1/3 cup oil
  • 1 Tbsp lemon juice
  • 2-3 medium bananas, mashed up
  • 2 eggs
Preheat oven to 325degs. Grease 1 muffin pan, or 1 bread pan. Mix together all the ingredients and divide between the muffin tins, or spoon all into a bread pan.
  • 1/3 cup brown sugar
  • 2 Tbsp flour
  • 1/8 tsp cinnamon
  • 1 Tbsp butter
Mix together the sugar, flour, and cinnamon. Cut in the butter until it creates a coarse mixture. Spoon over the muffins, or the top of the bread.
Bake the bread for 50-60 minutes, or the muffins for 20-25 minutes, until an inserted toothpick comes out clean.
