Monday Mix Up-Applesauce Bread

APPLESAUCE BREAD

It's monday here, and it's pouring rain. I should be sweeping and mopping the floors. K-girl is napping (I think, I keep hearing her though) and she needs a long one today since we can't go play outside because of the rain.

And here I am, blogging instead of doing the things I 'should' be doing. :)

I had a busy weekend, I"ll tell you all about it tomorrow or wednesday. Suffice to say, I threw my little brother a birthday party, making a cake, candy sushi rolls, and dutch oven salmon for him. It was a lot of work, but tons of fun. I love playing hostess! and today's his birthday! happy birthday bud! :)

Here's what you're going to need to make a yummy sweet bread:
Put everything in a bowl and mix it all together. I always think that there's not enough liquid when I start mixing everything. it looks too dry, and I'm tempted to add some milk or something.

But just let it be, and keep mixing it up. It will all work out good.

spoon it into a greased pan. I used my silicone pan because I had no other clean pan. Since this was just for us, I didn't care that the pan makes some funny looking loafs.

Let it cool, and slice it up. It's wonderful with some butter, and I bet some cream cheese would be great as well!

APPLESAUCE BREAD
  • 3 1/2 cups sweet bread mix
  • 2 eggs, beaten
  • 1 cup applesauce
  • 1 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 1/3 cup oil
  • 1/2 tsp allspice
  • 1/2 tsp ground cloves
Preheat oven to 325degs. Grease your bread pan and set aside. Combine all the ingredients in a bowl and mix well (you could also add nuts if you'd like). Spoon into your bread pan. Bake 60-70 minutes until a toothpick comes out clean. Cool on a rack for a few minutes, then take out of pan and cool right side up.
