Mint Brownies (almost a monday mix up!)

MINT BROWNIES
(and by mint, I mean mint frosting)

My sister is having her baby. RIGHT NOW. At least we think so. . .she was induced this morning, and no one has heard anything about whether or not the baby is actually here yet. He probably is though.

If she lived in the state, I'd make her these brownies and take them over to her. Or I'd make her these brownies, she gave the recipe to me and I know she loves them.

Or I'd take her chinese. That's what I wanted after having K-girl. Actually that's all I wanted when I was pregnant with her too.

and I'm sorry I haven't posted much lately, Captain Jax and I are getting ready to buy a house. For real this time!! And no, not it Georgia like we hoped, that job didn't pan out like it should have. . .but that's another story. We're staying in Utah, just heading south a little bit. I'll be posting randomly as the weeks go by, in between packing and getting ready to move, and actually moving and getting internet set up. . .I'll be here and there!

Now go make these brownies. I used my brownie mix, but you can use a box mix or whatever your favorite brownie recipe is.

MINT BROWNIES
  • brownie mix (enough for a 9x13 pan)
  • 1/2 cup butter, softened
  • 1 lb powdered sugar
  • 1-3 Tbsp milk
  • 1/2 tsp mint extract
  • green food coloring
Make the brownies according to the recipe. Let cool completely. To make the frosting, mix together the butter and powdered sugar. Add only enough milk to make a smooth consistency. Add mint extract and enough food coloring for a light green color. Frosting will be thick. Spread over brownies and refridgerate until firm. Let sit at room temp for about 5-10 minutes before cutting with a sharp knife.

  4. I love mint brownies! You've posted a ton of recipes since I've been on here. Wow, you've been busy. So, the house that's more south....is that why I saw you in Wal-mart in our neck of the woods!?!? I hope the packing and moving goes smoothly!
