Pizza Puffs

PIZZA PUFFS

When I saw this during a blog hopping evening, (don't you all spend your evening blog-hopping?) I knew they were something our family would love.  The original recipe used mini pepperonis, but I used what I had on hand.  It came together so quickly! I used my cookie scoop to make sure there was equal amounts in each muffin compartment, and it made making these even easier.

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 2 Tablespoons chopped olives
  • about 1 cup mozzarella cheese, shredded
  • about 1 cup pepperoni, diced
  • pizza sauce, for dipping

Preheat oven to 375 degrees. Grease a 24-cup mini muffin pan. Lightly sprinkle with cornmeal, if desired. In a large bowl, whisk together the flour and baking powder; stir in the milk and egg. Stir in the cheese, olives, and pepperoni; let stand for 10minutes. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, about 25 minutes.  Serve the puffs with the pizza sauce for dipping.

  2. My daughter would love these. When I made some savory puffs before I think it was spinach, tomato and cheddar. Not as kid friendly as these...of course with enough garlic I would like these too!

  6. I have a similar recipe and we really love them! I've never thought of using a cookie scoop to get them in the pan, though. That's a great tip! :)
