Mini Meat Mounds

MINI MEAT MOUNDS

Y'know, I probably should have put this on a smaller plate, because they're not very big, and they look even small on this plate.

anyway, this is a family recipe, that my mother used to make a lot while we were growing up. Probably because with 6 kids, it's easy for them to love having their ow personal little loaf of meatloaf.

Shopping list: ground meat, eggs, oatmeal, milk, cheese, bbq sauce, and seasonings.


beat your eggs and then add everything but the meat and the cheese. There's a lot you could try, that's what nice about meatloaf. We don't put onions in ours because Captain Jax HATES those things. As in, pickes them out of EVERYTHING.


after everything's all mixed up nicely, you want to add your meat and squish everything together. I hate raw meat, it really grosses me out. Especially pictures of it. That doesn't look like something you want near you, does it.


I added some cheese too, because well, I put cheese in pretty much everything. That's how I roll yo (a tribute to an old college room-mate)


I made mine into heart shapes. I thought that would be fun. And I doubled the recipe and froze most of them.


What's that little heart shaped pan called? I don't even know, but it made them fun to make! I also put a slice of cheese inside, and not just because I love my cheese, which we all know I do. My dad gave me a recipe to try for 'inside out hamburgers' which was basicly a hamburger patty with cheese inside before you grilled it.

I kind of stole that aspect and added it to my meatloaf. and of course put some cheese on top like my mom used to do for ours.


Needless to say, we had a little bit more cheese than I bargined for leaking out of the meatloaf and oozing off the top. It was wonderful!

MINI MEAT MOUNDS

  • 3/4 lb ground meat
  • 1 egg
  • 1/4 cup milk
  • 1/2 onion, chopped
  • 3/4 cup oatmeal
  • 12 salsa or bbq sauce
  • 1/4 tsp garlic powder
  • 1/2 tsp chile powder

Crack egg into bowl and beat with a fork. Mix in milk, onion, oatmeal, salsa/bbq sauce, garlic and chile powder. Stir until well mixed. Break up meat and mix together. Divide into 3 or 4 portions, and shape each into a small mound. place in a baking pan. Bake 25 minutes and 350 degrees. Top with remaining salsa and bake another 10 minnutes. Serve 3-4.

  1. Okay, you might not know what the little heart thing is called, but where did you get it? I've got to try these for my kids. And the fact that you can freeze them....bonus!
