STRAWBERRY LEMON BARS
I came across a recipe like this while blog hopping, and I can't remember where I got it from. I first made it according to her recipe. Well, I screwed up a little bit. I put it in a 8x11 pan, not realizing it wasn't a 9x13 pan.
So they turned out a bit runny. We stuck them in the freezer, and they were still just 'ok'.
Captain Jax took one bite, and gave the rest to me. That's never a good sign.
But I like the concept! so here's my version, using my favorite lemon bar recipe (and I imagine this recipe could easily be adapted to whatever your favorite lemon bar recipe happens to be). I grew up with the recipe, and my older sister probably made it every sunday. In the cookbook my mom gave me with all of her recipes, it's actually titled "Jenni's Lemon Bars". So I guess it's her recipe!
JENNI'S LEMON BARS (turned into strawberry lemon bars)

Base:
3 cups flour
2 cubes butter
1/2 cup powdered sugar
Filling:
5 eggs
2 1/2 cups sugar
1/2 Tbsp baking powder
1/2 tsp salt
5 Tbsp lemon juice (I usually do more)
1/2 to 1 cup strawberries, pureed
Mix the base and bake at 350degs for 20 minutes in an 11x15 pan. Mix the filling for 3 minutes, pour over warm base, and bake for an additional 25 minutes.

ReplyDeleteI had to make these!! The crust was a bit to bland for me, so I will play with it a bit next time, but wow, the filling is amazing!! I used home made strawberry rhubarb jam, and reduced the sugar to only using 1 cup.. I got compliments that it could be used for a wedding cookie! I thought was a good thing!
