Corn Dip

CORN DIP

A while ago, my brother made this recipe and I fell in love with it. It's the perfect summer time appetizer! bring it to a bbq, or a side dish so you don't have to heat up your house. That's really the whole point of summer right? Eat outside and do whatever you can to NOT make your hours any hotter. At least, if you're in my house, that doesn't have A/C (but we do have a bajillion fans)

Easy recipe to follow, and not too much work involved. In fact, you could very well have all the ingredients on hand; in your pantry, fridge, and garden.

  • Peppers
  • Green onions
  • Sour Cream
  • Mayonnaise
  • Canned corn (whole, not creamed)
  • Grated cheese of some variety

Dice up your green onions

And your peppers. This is the mandolin my brother has (and he got for me as well!) and it works to get the peppers nice and thin.

Mix together the peppers, onions, and cans of corn.


Add the sour cream and mayonnaise. Mix together well, and then add the cheese. Chill in the fridge for a while, and then serve with fritos.

Note: this recipe is best eaten the same day you make it--if saved for too long, the liquid seeps out of the veggies, making the dip too liquidy. Still tasty, but harder to eat.

(Like a lot of my recipes, most of the ingredients are approximations. Add whatever until the recipe is a dippable consistency)
  • green onions, chopped
  • red and green peppers, finely diced 1/2 cup sour cream
  • 1/2 cup mayo
  • 2 cans whole kernel corn, drained
  • cheddar cheese, grated

Mix together the veggies, add the mayo and sour cream and then cheese. Chill in the fridge for about 30 minutes, and serve with frito chips. Recipe is best served within a few hours of making it.
