Spinach Cups--Saturday's Party

SPINACH CUPS

Welcome to the party this week!  Thanks to everyone for playing last week.  Here's a taste of what was shared.


Moms Crazy Cooking shared this recipe for Pumpkin Swirl Brownies.  I'm not a pumpkin person (which is why you haven't seen any pumpkin recipes on here during pumpkin season) but this looks amazing!!


 What party is complete without a bowl of meatballs?  Always Eat On The Good China shared this great recipe for Sweet and Zesty Meatballs.  I don't have a go-to meatball recipe, but I think this might be it!

And here's what I've got for you (are you reading this wonton warrior? ;)  It's for you!)  Spinach, cream cheese, mozzarella, and artichokes.  Combine them together, place in your wonton cups, heat them up, and you have your spinach artichoke dip, without all the hassle of dipping!

SPINACH CUPS
  • 36 small wonton wrappers
  • 1 small can(8 1/2 oz)artichoke hearts, drained and chopped
  • 1/2 of a 10 oz package frozen chopped spinach, thawed and well drained
  • 1 cup shredded monterey jack cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
Preheat oven to 325 and spray mini muffin pan lightly with cooking spray. Press one wonton wrapper into each cup and spray again. Bake about 9 minutes or until lightly golden. Repeat with remaining wontons.
Combine remaining ingredients and mix well. Fill wonton cups with mixture and place on a baking sheet. Bake about 7 minutes or until warmed through. Enjoy.

  6. These are awesome!!! I love spin dip but because servings are so large when I make it, we often eat it for dinner (so NOT healthy). The idea of little bite sized servings are tasty and great for a party! Thanks for bringing to Friday Potluck. Hope to have a new recipe to share with you next week! :)
