Guacamole, Cream Cheese, and Salsa Puffs



It's a Meatless Monday Post!

Recently my quilt group had a retreat with a big dinner and LOTS of sewing going on.  We each brought a side dish and after much contemplation about going to the store to pick something up, I found a recipe with things I had on hand!  And it was so tasty.  And reheated wonderful.  And Captain Jax and K-girl wouldn't touch it.  More for me!  Yeah!


It's pretty simple to assemble as well, get a nice assembly line going and you'll be set!

Once they bake up, they have nice flaky, crunchy, edges, and soft, gooey, innards.  I love it.  Nice and quick, with a beautiful presentation.

GUACAMOLE, CREAM CHEESE, AND SALSA PUFFS

  • Guacamole (approx 1 Tbsp per square)
  • about 2-3oz cream cheese (approx 1 tsp per square)
  • salsa (approx 1 tsp per square)
  • 1 box puff pasty

Let puff pasty thaw for about 1 hour.  Preheat oven to 400degs.  Line two baking pans with something--parchment paper, tinfoil, silicone baking sheet.. . .Roll out 1 package of the puff pastry as thin as you can.  Cut into 2 inch squares.  Spoon on guacamole, cream cheese and then salsa on half the squares.  Cover each with an empty square and seal up the edges good.  a tiny bit of water helped mine seal nicely, and then a fork all around the edges.  Repeat with second package of puff pastry (if desired, 1 package made 8 for me). Bake for about 15-20 minutes until they're a brown as you want.  Serve warm.

To reheat, just pop in the microwave for about 20-30 seconds.
