Oatmeal Pancakes

I've said it before, and I'll say it again.  I'm not a breakfast person.  Breakfast food? Yes, but not in the morning.  In the morning, you best just leave me alone.  I'll eat when I'm good and ready.  Which will probably be a few hours after I get up.  It's just what I do!

What I love about these pancakes is throwing everything in the blender.  INCLUDING the dry oatmeal.  The blender just pulverizes it and you can't even tell its in there!  Top it off with some fresh strawberries and it's perfect.  I even got Baby M (who is tube-fed) to try a bite.  Which is amazing!!  

These could almost make a perfect summer dinner, so quick to pull it all together, and no oven involved.  It's what I live for in the summer time--oven free meals!

  • 2 1/2 cups milk
  • 1/3 cup oil
  • 2 eggs
  • 1 tsp salt
  • 2 1/2 tsp baking powder
  • 2 cups oatmeal
  • 1 cup flour
Combine everything in your blender and give it a good whirl.  Make sure everything is blended up smoothly, and let the batter sit for a few minutes (2-5) to thicken up.  Cook on a hot griddle and serve warm with syrup and your favorite toppings.
