Double Chocolate Chip Cookies

DOUBLE CHOCOLATE CHIP COOKIES

Thanks to Brenda, over at Brenda's Canadian Kitchen, and her Cookbook Sunday's, I've been inspired to try harder to cook out of the ever-growing pile of cookbooks I have. And it's been awesome.

Here's a tasty cookie for you, that was a little bit more work than most of the cookies I make, but Captain Jax cannot stop eating them!  So I guess these are going to become a regular in our house.

And a word of advice before you make these: they will look like they need more flour.  They don't.  Just follow the recipe, stick them in the fridge and you'll be good to go, I promise!

  • 1 5/8 cups flour
  • 5/8 cup cocoa powder
  • 1 1/4 tsp baking soda
  • 1/8 tsp salt
  • 2 1/4 cup chocolate chips, divided
  • 1 cup butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
Mix together the dry ingredients in a bowl.  In your mixer, cream together the butter and sugars.  Melt about 3/4 of the chocolate chips, about 1 1/2 cups worth.  When the butter and sugars are light and fluffy, add the melted chocolate.  Gradually add the eggs and vanilla.  Then slowly add the dry ingredients, and the rest of the chocolate chips.  Stick the dough in the fridge.  After about 30 minutes, preheat your oven to 350degs.  Bake the cookies for about 10 minutes.

  4. Hey, thank you for the shout-out! It's amazing all the cookbooks out there not getting used, lol! These look delicious. Chocolate with chocolate, how can you go wrong. These wouldn't last at my house. I picture them with a big tall cold glass of milk. Mmmmm......
